Chicken Salad


When the workweek gets busy, having something prepped and ready in the fridge can make all the difference. This chicken salad is one of those lifesavers. I created this by trying to use up some pantry items and produce, so it’s the perfect meal to customize with whatever you have in your kitchen! It’s light, flavorful, and keeps well for several days, making it perfect for lunches, quick dinners, or even a snack between meetings. The mix of sweet, crunchy, and savory ingredients gives it some balance so you’ll actually look forward to eating it all week. This is one of my new favorites for busy weeks when I want a light option that’s good for any time of the day!

I am not a huge fan of mayo, so I swapped out most of the mayo in this for Greek yogurt, but you can do all mayo if you prefer! I like the tang that Greek yogurt gives it, as well as making it a lighter meal with some added protein.


Ingredients

For the Chicken Salad

  • 2 chicken breasts
  • ½ cup apple, diced
  • ¼ cup red onion, diced (or less depending on preference)
  • ¼ cup walnuts, chopped
  • ¼ cup raisins or dried cranberries
  • ¼ tsp dill

For the Dressing

  • ½ cup Greek yogurt
  • 3 tbsps mayonnaise
  • 1 tbsp fresh lemon juice
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

Start by marinating your chicken if desired. I marinated mine in some Greek yogurt with pickle juice and seasonings. Then, cook your chicken breast (pan seared, baked, or grilled all work well).

Let it cool completely, then dice or shred it into bite-sized pieces. While the chicken is cooking, dice the apple, and red onion. Roughly chop the walnuts. In a medium bowl, whisk together the Greek yogurt, mayonnaise, lemon juice, paprika, garlic powder, dill, salt, and pepper until smooth and creamy. In a mixing bowl, combine the chicken, apple, red onion, walnuts, and raisins. Pour the dressing over the top and gently toss until everything is evenly coated. Cover and refrigerate for at least 30 minutes to let the flavors blend. Serve it over mixed greens, in a wrap, or on its own.


This is an easy peasy chicken salad and the perfect meal to make and eat throughout the week. You can get really creative with this as well and add other ingredients you have in your kitchen! There are endless possibilities. I enjoyed this over a bed of lettuce or with some thick cut jalapeño chips, but it would be delicious on a croissant or roll too. Enjoy!
